Baked Eggs in Baskets

Ingredients
  1. 6 slices medium white bread
  2. 35g softened butter
  3. 1 tsp of half fat crème fraiche
  4. 1-2 slices of ham
  5. 6 medium eggs
  6. grated parmesan
Instructions
  1. Press 6 slices medium white bread with a rolling pin and spread one side with 35g softened butter.
  2. Cut each in half and press 2 pieces into a hole of a muffin tin, butter side down, repeat to make 6 baskets.
  3. Spoon 1 tsp of half fat crème fraiche in each basket, top with 1-2 slices of ham, torn into small pieces and crack in a medium egg into each, sprinkle with a little grated Parmesan and bake for 18-20 minutes until the whites have just set but with a slight wobble.
