Ingredients

4 slices of thick crust white bread or wholemeal bread

6 smoked rashers

2 eggs

1 tablespoon of maple syrup (and a drizzle to serve)

Raspberries and blueberries to serve

 

Method

1. Crack your eggs into a mixing bowl, add the maple syrup and give a good whisk

2. Add a teaspoon of olive oil to a large non-stick frying, give the pan a swirl making sure it is covered with oil

3. Place your rashers on a baking tray and grill until crispy this will take from 5 to 10 minutes

4. One slice at a time completely immerse your bread in the egg mixture, letting it soak it up like a sponge

5. Fry your bread one slice at a time until its golden on both sides flipping with a spatula

6. When all the bread is fried, and the rasher is crisp, slice your eggy bread into triangles

7. Build a stack by adding a slice of bread then a rasher and repeat until you have used all the bread. Hold in place with a skier and serve with raspberries and blueberries and an extra drizzle of maple syrup
