  1. 15g butter
  2. 200g mature Irish Cheddar cheese, grated
  3. 1 tbsp plain flour
  4. 1 tsp wholegrain mustard
  5. 4 tbsp Guinness
  6. 1 tbsp chopped parsley + extra for serving
  7. 4 slices white batch bread
  1. Place the butter, cheese, flour, mustard and Guinness in a small saucepan and heat gently, stirring until melted. Cook for 1-2 minutes, stirring until thickened. Season with black pepper and allow to cool before stirring in the parsley.
  2. Toast 1 side of the bread and spread the untoasted side with the rarebit. Place under a preheated grill for 2-2½ minutes until golden.
  3. Sprinkle with extra parsley to serve.

  2. Try adding a dash of Worcestershire sauce to the mix for extra flavour.
