Serves 4

Cooking time: 30 minutes 


4 cod fillets

1 small tin of sweetcorn or garden peas

2 cloves of garlic

A handful of fresh snipped chives

2 tablespoons of crème fraiche

1 chicken stock cube

4 slices of Soda Bread 

100g of parmesan cheese

100g cheddar cheese



1. You will need a large pan, a blender and an ovenproof dish

2. Heat the large pan with a drizzle of olive oil and fry light on a medium heat

3. Check the cod for bones, picking or slicing them out

4. Add the cod to the pan and fry for 5 minutes on each side, then flake with a fork, keeping the flakes large

5. Chuck in the corn or peas crushed garlic and crumble the chicken stock cube over

6. Season with a little salt and pepper, and dollop in the crème fraiche

7. Snip the chives (keeping some aside for the crumble) and stir them into the cod mixture

8. Leave on a low heat for 10 minutes while you whizz up your Soda bread into bread crumbs in a blender and grate the cheeses. Mix together

9. Transfer the fish mixture to a medium-sized ovenproof dish and top with the breadcrumbs and cheese mix. Sprinkle over the chives and some black pepper. 10. Whack under the grill for around 8 minutes until the crumble has gone a golden brown

11. Serve with potato wedges and greens
