To help inspire you to be creative with the nation’s favourite food, here are some serving suggestions we’ve put together to help you Love your Loaf. 

CINNAMON FRENCH TOAST STICKS

Cinnamon french toast sticks

 Whisk 1 large egg with 2 tbsp milk, dip 2 slices white batch bread in until all the egg has been soaked up.  Heat a frying pan with 1 tbsp oil and fry the French toast until golden on both sides.  Cut each into 6 sticks.  Mix together 25g caster sugar and 1/2 tsp ground cinnamon and roll each stick into the sugar until evenly coated.  Serve with sticks of fresh pineapple and mango

AVOCADO ON TOAST

Avocado on toast

Mash 1 ripe avocado and mix with 4 sliced spring onions, 6 quartered cherry tomatoes and 1 tbsp mayonnaise, season.  Brush 4 slices Irish brown soda bread with oil and griddle for 1-2 minutes each side until golden.  Spread with the avocado mix and divide between 2 plates, top each with a poached egg.

BAKED EGGS IN BASKETS

 Press 6 slices medium white bread with a rolling pin and spread one side with 35g softened butter.  Cut each in half and press 2 pieces into a hole of a muffin tin, butter side down, repeat to make 6 baskets.  Spoon 1 tsp of half fat crème fraiche in each basket, top with 1-2 slices of ham, torn into small pieces and crack in a medium egg into each, sprinkle with a little grated Parmesan and bake for 18-20 minutes until the whites have just set but with a slight wobble.

IRISH SODA BRUSCHETTA

Irish Soda Bruschetta

 Mix 250g cherry tomatoes in a small roasting tin with 1 tbsp oil, 1 tbsp balsamic vinegar, 2 tbsp chopped basil and 1 chopped clove garlic and roast for 15 minutes. Brush 4 slices Irish brown soda bread and griddle for 1-2 minutes each side and top with the tomatoes and their juices.

 

IRISH CLUB SANDWICH

Toast 3 slices wholemeal bread and spread with a little mayonnaise. Top 1 slice with 2 rashers grilled back bacon and 1 sliced tomato, add another layer of toast and top with 1 small cooked and sliced chicken breast and a little salad, then top with the final slice of toast.

 

IRISH PRAWN TOASTS

Irish Prawn Toasts

Place 300g cooked, peeled prawns in a food processor with 2 tsp Worcestershire sauce and 2 tbsp chopped chives and blitz to give a coarse paste, spread onto 3 slices of white sliced bread. Cut each into four triangles and fry for 1-2 minutes each side until golden.

 

POACHED EGGS ON BATCH

Poached Eggs on Batch

Poach 2 eggs for 3-4 minutes then place on 2 slices of toasted white batch bread topped with wilted spinach and a slice of ham. Drizzle with mustard dressing.

 

BEANS ON TOAST

Beans on Toast

Cook 400g can drained and rinsed mixed beans with 400g can chopped tomatoes, 2 tbsp tomato ketchup and 2 tbsp Worcestershire sauce for 10 minutes until thickened, spoon over 2 slices toasted wholemeal bread.
