To help inspire you to be creative with the nation’s favourite food, here are some serving suggestions we’ve put together to help you Love your Loaf.
IRISH SODA BRUSCHETTA
Mix 250g cherry tomatoes in a small roasting tin with 1 tbsp oil, 1 tbsp balsamic vinegar, 2 tbsp chopped basil and 1 chopped clove garlic and roast for 15 minutes. Brush 4 slices Irish brown soda bread and griddle for 1-2 minutes each side and top with the tomatoes and their juices.
IRISH CLUB SANDWICH
Toast 3 slices wholemeal bread and spread with a little mayonnaise. Top 1 slice with 2 rashers grilled back bacon and 1 sliced tomato, add another layer of toast and top with 1 small cooked and sliced chicken breast and a little salad, then top with the final slice of toast.
IRISH PRAWN TOASTS
Place 300g cooked, peeled prawns in a food processor with 2 tsp Worcestershire sauce and 2 tbsp chopped chives and blitz to give a coarse paste, spread onto 3 slices of white sliced bread. Cut each into four triangles and fry for 1-2 minutes each side until golden.
POACHED EGGS ON BATCH
Poach 2 eggs for 3-4 minutes then place on 2 slices of toasted white batch bread topped with wilted spinach and a slice of ham. Drizzle with mustard dressing.
BEANS ON TOAST
Cook 400g can drained and rinsed mixed beans with 400g can chopped tomatoes, 2 tbsp tomato ketchup and 2 tbsp Worcestershire sauce for 10 minutes until thickened, spoon over 2 slices toasted wholemeal bread.
